DESCRIPTIONS
▪️Soya bean soup is a delicious soup recipe that is cooked and thickened with powdered soya beans.
▪️Soya bean soup really looks like Egusi soup, but their tastes are different.
▪️Soya bean soup is cooked just like Egusi soup, which can be cooked either through cooking or frying methods.
▪️Soya bean soup is very easy to cook, except the process of making the soya beans into powdered form.
▪️Soya bean is also known as soy bean or soybean.

MAIN INGREDIENTS
🔹Soya bean powder ( 200g or 2 cups )
🔹Meat ( of your choice )
🔹Palm oil ( 3 cooking spoons )
🔹Stockfish ( 1 big sized )
🔹Dried or smoked fish ( size of choice )
🔹Cow skin ( kpomo )
🔹Crayfish ( 1 ground cup )
🔹Fluted pumpkin leaf, bitter leaf or uziza leaf
🔹Onion ( 1 big chopped bulb )
🔹Fresh peppers ( to taste )
🔹Stock cubes ( to your taste )
🔹Salt ( to taste )
OPTIONAL INGREDIENTS
🔸Fermented locust beans ( iru, ogiri or dawadawa ) 1 wrap
🔸Snails ( 8 big sized )
🔸Uziza seeds ( little )
🔸Dried Prawns or shrimps
🔸Periwinkles ( removed ) 1 cup
ALTERNATIVE INGREDIENTS

METHODS OF PREPARING SOYA BEANS SOUP
There are 2 main methods of preparing soya beans soup:
1. Cooking method
2. Frying method.
▪️The only difference between these two methods is that, in frying method, the soya bean is fried in palm oil at the beginning of cooking the soup, while in cooking method, the soya bean soup is added at the middle stage of cooking the soup, without frying it.
▪️Cooking method is the original method of cooking this delicious soup while frying method is the modern and sweetest of all the various ways of cooking this soup.

PREPARATION BEFORE COOKING THE SOYA BEANS SOUP
▪️You can grind or blend your soyabeans into powdered form with any of the followings such as, dry mill, dry blender, hand grinding machine or you pound it.
▪️Blend the pepper and onion together and pour through a sieve to remove any excess water. This can only be done, when you want to fry the soyabean.
▪️Slice your onion into 3 parts. Use one part to steam the meat, some to blend with the fresh pepper and the rest to be used to fry with the soyabean. This can only be done, when you want to fry the soyabean soup.
▪️Mix with your spoon, your onion, ground crayfish, ground pepper, and the ground/blended soyabean with little warm water, to form paste ( thick consistency ) and set it aside.
▪️Pluck, wash, and shred your vegetable leaf of choice.
▪️Wash the periwinkles, dried fish, smoked fish, stockfish, kpomo, and other ingredients thoroughly, rinse and set them aside.
▪️Steam your meat and other protein ingredients and set it aside.

FRYING METHOD OF COOKING THE SOYABEAN SOUP
Step 1: Pour your palm oil to fry the soyabean into a dry emptied cooking pot, and once the oil is hot, add in the chopped onion and ogiri/locust beans and fry until the onion becomes translucent.
Note: you can add in the locust beans later, without frying it.
Step 2: Add in the soyabean paste mixture bit by bit like balls into the cooking pot and let it fry for about 5 – 8 minutes on low heat.
Note: The soyabean will suck all the palm oil.
Step 3: Add in the meat/fish stock bit by bit and stir, so that the soyabean does not burn, cover and allow to boil for 10 minutes on medium heat.
Note: When the meat stock is exhausted and you feel that the soup is still thick, you can start, by adding hot water in it, bit by bit, till you get the consistency of your choice.
Step 4: Add in your steamed meat, smoked fish and other protein ingredients.
Step 5: If your choice of vegetable is bitter leaf, add it at this time/point and cover for 5 minutes without stirring it.
Step 6: Add in the ground crayfish, pepper to taste, and periwinkles and stir well.
Step 7: Taste for salt and other spices.
Note: The soyabean soup is done when you notice that the oil has separated from the soyabean, and moved to the surface of the soup.
Step 8: if you are using fluted pumpkin leaf ( ugwu leaf ), this is the right time you can add it, cover the pot and allow to simmer for 1 to 2 minutes.
Note: Always make sure you cook your pumpkin leaf half done.
Step 9: Turn off the heat and your delicious soyabean soup is ready to be served with any swallow of your choice.
